Moving away from segmented item numbers

Our company started using item structures and segment codes around 3 years ago and it is simply not working for the type of business we do.  Currently we use the hyphen as a segment separator.  We would like to go back to using the vendors item number as our item number for simplicity and ease of use.  My question is what do we do for items that use a hyphen in the vendor part number?  Would we simply turn hyphen to no in IC/Options and then run the item number change to go from CFI-STE-WEAR-M-20162 to 715-P20162 using a 24 character structure code?  I know when I go to switch the hyphen to no it says once its done there is no going back.  Is this truly the case or could someday in the future if we did want to revisit using separators would it be possible to turn it back on via SQL? Can anyone give me the correct order we would need to do this in?  Are there risks to doing this type of reverting?  I am currently writing the proposal for the project but would like to have the steps written out in my proposal.
