Hi, we created our own menus but the icons are arranged as they were added. Is there a way to organize them differently? Thanks.
They like to reset their positions at random. Name them as 1.x, 2.x, 3.x, etc., that might help organize them.

It doesn't put them in order, it just gives the user a visual reference.
It's one of the Great Mysteries of Sage.
The good news is that they only rearrange the first time you log out and back in again, after adding icons. Since this drives me nuts, way beyond how important it is (isn't!), i often copy and paste icons again and again until one or more land in the general direction I want after logging out/in; then I delete the ones prior to the one that was at least in the right direction. Sometimes I get what I want. Otherwise I do the 1-2-3 thing to give the user a hint of what should come first.
When the HTML5 Visual Process Flows are ready to customize (version 2021.1?), use that instead. You have full control over what lands where, as well as the ability to add notes, and assign one batch of icons to multiple users.
