Do they use credit card processing? Do they have a web page?  Why would they prefer to use the SQL version?

We have many Premium clients... and would not recommend any shortcuts.  Read all the Sage documents (Install & Sys Admin guide, SPM...).

One buried and obscure details is SQL Collation.  Be sure that is correct before installing Sage 100. 

Always use the SQL "sa" account when authenticating during the install... never Windows authentication (which is fine for ODBC). 

Be sure to have a SQL expert properly plan the backup and recovery settings (SQL log files).

One "quirk" you may run into is that once you go Premium the SOTAMAS90 goes away for external reporting and any external reports now connect though the SQL driver.

They do not use credit card processing at this point.  They do have a web page.  They have a programmer that extracts their orders and invoices from their existing ERP system, and puts them on their web page.  The reason they want the SQL version is because that is what their existing ERP system is.  They feel comfortable with SQL.
