Deleting data from server (especially Projects)

Good morning

We are a SME and have used Sage accounts since 2004, around 2012 we decided to use the project option, I think it became available when we upgraded the package. 

Our data is held on our server.

We have not had too much trouble until we started trying to delete projects, a chore in itself as you cannot delete them for so many reasons it's untrue. But I digress and I get it, computers need certain things to happen before they work.

So we were told we needed to reduce our data that is current, that all of the data archived would remain in situ and that we would be able to access the old data as read only whenever that became necessary. 

My question is if I delete the data, as and when necessary, from the server does the archived information remain?

We can have our IT support allow us access to the server in order to do this but the data will be gone from the live data. I'm hoping someone here can help because I've asked so many questions with reference to this on Sage technical, I'm not sure how to word it now.

    Thank you Andy for your reply, I will take a look at the webinar but in the meantime will probably ask our IT team to let me access the server and start the ball rolling.

    I'm hopeful that this won't bring errors with it, as it did during this week after we had attempted to delete data from the projects. But we shall see.
