 Your Due at Start is the amount you start the current pay period. If i review the details provided: 
 In your case, the employee is owing you 7 days leave (-7) 
 The entitlement is 1.25 days 
 Due at start + Entitlement - Days Taken = Due at End

 1.2500 
 0 
 -5.7500

If the employee takes 2 days leave, the balance will be -7.75 days owing to the company
