Customize the "Reply to" field of emails associated with workflows sent from mail server

We are parameterizing and adjusting a Sage X3 V6 installation,
We have different workflows configured in different modules of Sage, one of them corresponds to the module of purchases.
The workflows are currently sent from the users mail client. This method always adds a dialog box that shows Oulook, and warns that an application is trying to send an email, which we have not been able to remove by customizing the Outlook configuration. We have had cases where by mistake the user has not accepted the warning and the email associated with the workflow has not been sent.
We would like to configure our workflows to be sent from a mail server and in this way solve this problem. But for this we have to somehow change the "sender" or "reply to" of the email generated in the workflow and change to the email that has the user logged in on the Sage X3 system, since many clients usually respond to emails that are sent associated with these workflows.
Any idea how we can customize the "Reply To" field of emails to be sent from workflows sent via email server?
