Have invoice subtotal inventory items with clases

We are wholesale greenhouse, currently we don't track our inventory through sage.  The inventory items are grouped under the container they are grown in (10" hanging baskets, 1203 Flats, 1801 Flats etc.).  I am trying to get our inventory to be tracked by plant variety, color and container type and entered as such into the sales order/invoice. (they don't use sale orders at this time either).  

My question is can we use classes for the container and is there a way to subtotal on the invoice by class?   Our accounts receivable clerk doesn't want the invoices to list out each individual variety and color because the invoices would be 8-12 pages.  The only way I will be able to track inventory is if I can come up with a way for them to enter items from the order by variety, color and container, but then have the invoices subtotal by container.  

Example:

Order comes in and is requesting:

3 Impatiens/blue pearl/10" Hanging baskets

4 Petunia/red/10" Hanging Baskets

12 Petunia/blue/1203 Flat

10 Marigold/yellow/1203 Flat

The clerk enters all items as above in the sales order but the invoice totals the containers on one line like below:

    Hi Michelle, This will require the use of XLGL, which is the Sage-recommended custom-report writing software. We are experts at using XLGL to produce user-friendly reports to access your Sage 50 data in any way you need it. You would need to enter a sales invoice (or preferably a sales order) into Sage 50 and save the transaction. Using Item Type, I could write you a custom Sales Invoice that would show only the subtotal of Container Types as shown in your example. XLGL is an MS Excel-based software and can only produce a Sales Invoice for a single reference number (invoice#). If you need to batch print several sales invoices, this solution would not behave properly.
