The "X" value is only used for Payroll.  When processing payroll there are several "journal/register" tasks that are printed, Payroll Data Entry Audit Report, Earnings Register, Time Off Register, etc.  When the actual Check Register is printed to Paperless Office the system will go back through all of the log records and find any of those other PDFs and update their log records with the source journal+journal no from the check register and changing the update field to "Y".  This ties them all together so you can easily sort them in the viewer to see all the PDFs for a payroll run.

The "X" is assigned when there were multiple copies of those task's PDFs to help differentiate them from ones that are pending update (Updated="N").  In your screenshot, the Payroll Entry Audit Report was printed twice, the first copy has Updated="X" the second has been assigned the source journal+register number from the check register and is Updated="Y".

I will have the help updated to explain this.
