Monitoring Email management/synchronization

As you all may know, every once in a while the email management service or the Exchange sync service gets knocked out. The only way we know is when a customer complains that emails are not getting filed or they missed an appointment. Often the problem is a hung Tomcat service or some other issue.

What are your strategies to know when the service has gone down before the client finds out? I'd like to be able to intercept the problem before the client complains.
