The Recurring Charge "Next Invoice Date" is driven from the Schedule Code frequency, as set under Common Services.
The 'AR Create Recurring Charge Batch" will only create documents using that next invoice date.

For a one-off date change:  
You can of course edit the recurring charge batch it makes, using the Invoice Entry screen, and change the date there.

For a permanent date change:
Going forwards, you can change the Schedule code associated with each recurring charge, to a new Schedule code with a different day for the run. Note you cant update the recurring charge "Last Generated Date", which means you cant use it to create another invoice in a date range that has already been run.
