Processing and paying a leaver before year end

I have a leaver for the 31/03 who I want to pay and process as a leaver before I do year end. I have set my process date to the 31/03 but when I try to enter payments it de selects him?

This can happen if you have already paid them in month 12, you need to roll them back and reprocess including all payments, then pay them the difference between what was originally paid and what they are due.
