The only field you can't create a recipe for currently is the Bank accounts field available for Sage HR integrated with Sage 50 Payroll. 

You can disable this field and create a custom field bank details option instead, which you could get notified about changes (if you allow an employee to amend it).

There isn't an option to get a notification about changes to ANY field, you would need to create a recipe for each field. However, this is something I can feedback as a suggestion for improvement to recipe functionality.

Alternatively, you could set up your employee permissions to prevent employees being able to amend certain fields themselves.

Just so you're aware later this month we're bringing in new permissions functionality in Sage HR to give you greater customisability over what users can access and edit in Sage HR. So if required you could have employee permissions be set for employee users to only be able to view their profile, rather than edit it, as an example.
