new company setup

Good morning from Vancouver Island

I am somewhat familiar with sage 50 - I've worked with the daily posting and reporting etc for a few years.  I did not set up this company. I have recently taken a online sage 50 Course at Fleming College.

Now, I've been asked to help out a small pub and restaurant set up a new company. However, they have only been in operation for 9 months. They have a reliable POS system that will provide me all the REVENUE $$.  They use a Payroll Service that will provide the WAGES etc.  For everything else they have boxes of paper receipts and invoices for expenses and asset purchases.  Most likely will not be using the inventory module at this time.

Now, in all my course work cases in setting up, there have been existing chart of accounts, trial balance opening amounts, etc, all nicely provided,  to set up and get going.

However, in the task at hand at setting up a company with Sage 50 for the small pub and restaurant, this restaurant has  no trial balance or financials to get me started, (only "boxes" of invoices/receipts) I believe the accountant will provide/guide us with the Chart of Accounts.

My question is, with no opening balances, or trial balance, which route must I take to get started?

I've been researching this for a couple of weeks, I've read the guides,  I have read many forums but cannot pinpoint my query, and cannot find any answers.

Of course, any guidance, is greatly appreciated
